Charles was born on a military installation in Ireland and lived in South Carolina until joining the U.S. Army in 2000. He was stationed in Utah as a lawyer, and fell in love with the mountains so much that he decided to stay after being discharged from the service.
“Cooking has always been my passion in life. It lets me restore people’s bodies and minds by filling their bellies.” Charles has opened several restaurants in Park City, UT. After many years of successfully running restaurants he decided it was time to open his own restaurant, slow down, and have a life.
